La Bodega Obregón is a popular sherry bar in the town of El Puerto de Santa María, part of the ‘sherry triangle’ in south west Spain. José Luis González Obregón sells some of his own sherries at his bar, and he sells others to Lustau to bottle and sell as part of their Almacenista line. The Spanish word 'Almacenista' means exactly that: a wine dealer who buys sherry directly from the producer, bottles it, and takes it to market.
El Puerto, as it is called by the locals, is a port town on the Atlantic coast that is known for the cool and humid air that blows in off the ocean. These breezes provide the ideal environmental conditions for ‘flor’ to grow inside the sherry casks where the sherry wines, made from the local Palomino grape, are aged in the ‘solera’ system. This 'biological aging' creates a clean, fresh and bone-dry fino sherry with intense citrus and salty notes. Think preserved lemons and salted almonds. You could serve this before dinner as an aperitif with some aged cheese and olives, but it will also pair well with seafood or sushi.
